Ingredients:

  • 275 g (10 oz) dried pasta
  • 325 ml (1 1/3 c) snow peas
  • 250 ml (1 c) low-fat ricotta
  • 15 ml (1 tbsp) chives, snipped
  • 10 ml (2 tsp) fresh mint, finely chopped
  • 4 scallions, chopped
  • 40 g (8 tsp) grated Parmesan

Instructions:

  1. Add pasta, such as penne or fusilli, to a pot filled with boiling water. Cook the pasta for 10 minutes, or until tender but firm to the bite.
  2. Meanwhile, cook snow peas in a pot of boiling water for three minutes, or until cooked. Drain and return the snow peas to the pan.
  3. Add low-fat ricotta, chives, mint and scallions and toss together gently. Drain the pasta and transfer it to the pot with the sauce and snow peas.
  4. Mix thoroughly and serve with 10 grams (two teaspoons) grated Parmesan sprinkled over each portion.
