It was in Caraquet, New Brunswick, when the idea of a food truck began to take shape. "On August 15, 2013, at the Caraquet Acadian Festival, the idea of Bleu Homard was born," says Isabelle Giroux.
Isabelle is Sylvain Brideau's wife, who is a New Brunswicker, which explains the concept of the food truck. The duo of entrepreneurs, who didn't waste a second once they had the idea, offer us an ode to the sea.
Two months after coming up with the idea, they received their first contract from the Poutine Festival in Drummondville, before they had even bought the truck! On the first day of the festival, the truck upheld its commitment and rolled in joyously, dishing out lobster rolls, poutine and other festive dishes.

Bleu Homard beautifully blends French and Acadian cuisine, with delicious results. For example, the lobster rolls with homemade mayonnaise, blue poutine with cod fritters, cheddar cheese and Ermite bleu cheese, as well as shrimp pogos ... mmmmm.
