Finding the Fresh-adilla food kiosk located in Market on Macleod is like encountering an authentic Mexican street food vendor. Staffed by the husband and wife team of Maria and Juan, it features a short menu. However, the few food items it does serve – quesadillas, sopes and pozole, a maize-and-meat stew – are the real Mexican deal. Made before your eyes, these dishes are packed with bona-fide Mexican flavours.
“When we opened in 2015, Calgarians would tell us not to try and make what we think Canadians would like. Make the food just like you do in Mexico,” says Maria. Remaining true to their roots has paid off. Open from Thursday to Sunday, Fresh-adilla's counters are often crowded on weekends with a mix of patrons trying a real taste of Mexico for the first time and Mexican expats enjoying a delicious taste of home.
